When I first contacted Nick Cavalla to suggest lunch, Plan A had been a trip to Cambridge, a city whose restaurant scene I have neglected for around 20 years. When he ran through the options, it soon became clear that the passage of time had changed little. Not fancying a burger in Brown’s, he assured me a trip to London would suit him just as well. He still lives in town, commutes to the Fens and his job takes him around the world.
